How we grade this

Colour is measured, not guessed, so ASTA comes from the instrument. What Kun and Chuangui add are the checks a meter misses: a natural deep red, not orange, dull or unnaturally bright; a sweet pepper smell without stale, mouldy or burnt notes; very little heat and no bitterness on the tongue. A spoonful stirred into warm water should colour it evenly with little sediment. Fast, bright colour suggests dye, and heavy sediment suggests filler. A suspect lot is held for laboratory testing rather than judged at the desk.

Frequently asked questions about Paprika Powder

What ASTA do I need?

As a rough guide, 180–220 ASTA is premium, fully deseeded powder from high-colour Xinjiang pepper; 140–180 is grade 1; 100–140 is grade 2; 60–100 is used for feed and industrial colour. Each extra 20 ASTA points typically adds 15–25% to the price.

Why does paprika lose colour?

Heat and time. Milling above about 50 °C can cut ASTA by 10–20%, and six months at room temperature can take another 10–20%. Low-temperature milling, light-proof foil bags and cool storage slow it.

Xinjiang or Shandong paprika?

Xinjiang powder is the deepest red (ASTA 160–220), sweet and almost without heat, and the most expensive Chinese origin. Shandong offers steady mid-to-high grades (120–180) and the largest milling capacity.

Is paprika the same as chilli powder?

No. Paprika is milled from sweet peppers for colour and mild flavour, usually 500 SHU or less. Hot chilli powder is a different product, bought for heat.

Is the powder sterilised?

Most export paprika is steam-treated briefly at 105–110 °C, which has little effect on colour and flavour. Some buyers require irradiation and others forbid it, so tell us your rule.
