How we grade this
Kun and Chuangui press and snap slices: a dry slice is crisp and firm and breaks cleanly, while a soft or light slice is damp. They look for a natural yellow-brown colour. Very white or bright slices suggest sulphur treatment, dark ones age or scorching, and reddish ones spoilage. They break a slice and smell it for clean ginger, without sour, mouldy or sulphur notes.
Damp slices, skins and fragments tend to settle in the middle and at the bottom of bags, so they sample from there, not only from the top. Thickness and piece size are checked against the order; moisture, volatile oil and SO₂ come from the laboratory, and origin from the supply records.
Frequently asked questions about Dried Ginger Slices
Yunnan or Shandong ginger?
Yunnan small yellow ginger gives small, thick, dense slices with a rich, lasting heat and a sweet finish. Shandong large ginger gives larger, thinner, milder slices at about 30% less. Choose Yunnan for flavour-led drinks and infusions, Shandong for volume and processing.
Can I get sulphur-free slices?
Yes; specify it. In Yulin, sulphur-free slices cost about 20–25% more than sulphur-treated ones, and the SO₂ result on the lot certificate confirms them.
When is new-crop ginger available?
China lifts fresh ginger from October to December and dries it from November to February. Stored fresh ginger keeps slices available all year; new-crop slices trade at a premium over old crop.
What thickness do you supply?
Our reference is 2–4 mm. Thin slices of 1–2 mm and thick slices of 4–6 mm are also traded; state the range you need.
Can I get ginger powder?
Powder is made by a processing partner to an agreed mesh and microbiology limit, and quoted separately.
