How we grade this

Twigs are a different plant part from bark, so Kun and Chuangui first check that the lot is what it says: leaf-removed twig with its woody core, not bark offcuts. They measure section length and diameter, look for leaves, dust and mould, and snap a section to smell it. The aroma is lighter than bark's, but it should be clean and warm.

Frequently asked questions about Twig Sections

What are cassia twig sections?

Cut young cassia branches (桂枝, gui zhi in Chinese), with the bark and woody core together. They are used in infusions, herbal blends and further processing.

Are twig sections cheaper than bark?

Yes. They are priced by section size and cleanliness, and carry less aroma than bark.

Can twigs replace bark in a recipe?

Not one for one. The woody core adds volume but little aroma, so test the dose in your product.
