How we grade this

Cut pieces are cut on purpose to a shape, so Kun and Chuangui check shape and size consistency first: rings, curls or pieces within the agreed dimensions, clean cuts and few crumbs. They then check that the surface is natural or scraped as stated, and smell and taste a piece, because these often go straight into drinks and spice kits: sweet and warming, with no sour or musty note.

Cut pieces are cut deliberately to a size and shape for infusion, drinks and kits. Chips are irregular broken bark for grinding and extraction.

Can you supply pieces for mulled wine or spice kits?
