How we grade this

These are natural rolls cut short, so the checks combine both. Kun and Chuangui measure the spread of length and diameter across a sample, look at the cut ends for splintering and for hollow or crushed rolls, and check the natural surface for mould spots. A snapped stick should smell sweet and warming, with no sour or musty note.
